EGG BURJI/ANDA BURJI

Ingredients required

  • Eggs - 4
  • Chopped onion - 2 cups
  • Chopped tomato - 1 cup
  • Sliced green chilly - 2
  • Chopped garlic -  2 tsp
  • Curry leaves - as required
  • Coriander leaves - as required
  • Turmeric powder - ¼ tsp
  •  Salt - ¾ tsp
  •  Red chilly powder - ½ tsp
  •  Oil - 3 tsp
   


        Method to prepare
      1. Take a pan, add oil and allow to heat.
      2. Add onion, green chilly, chopped garlic, curry leaves and  fry for 4 minutes in medium flame.
      3. Now add tomato, turmeric powder, salt, red chilly powder, close the lid and cook this onion mix
           for another 4 minutes in medium flame.
      4. Then break eggs, add to the onion mix, stir well.
      5. Add coriander leaves and fry until the mixture is dry.
      6. Tasty egg burji is ready. Serve with roti or rice.
