- All purpose flour - 2 cups
- Ghee - 2 tsp
- Salt - ½ tsp
- Ajwain - ¼ tsp
- Potato - 3
- Green peas - ½ cup
- Cashew nuts - 10
- Cumin seeds - ¼ tsp
- Green chilly - 3
- Onion - 1
- Chopped ginger - ½ tsp
- Lemon juice - 3 tsp
- Turmeric powder - ¼ tsp
- Curry leaves - as required
- Coriander leaves - as required
- Oil - to fry
Method to prepare
1. Boil potatoes, peal off and cut them into small cubes.
2. Take a pan, add 2 tsp of oil and allow to heat. Add cumin seeds, ginger, curry leaves, cashew nuts, chopped onion,
mashed green chilly, fry for 2 to 3 minutes in low flame.

3. Now add cubed potatoes, boiled green peas, ¼ tsp of salt, coriander leaves, mix well, fry for 2 to 3 minutes in low flame
and switch off the stove.
4. Keep this curry aside and let it cool.
5. Take a bowl add maida, rest of the salt, ajwain, ghee, sufficient water, mix well to make a soft dough. Make dough into
balls and keep aside.
6. Then take one of the balls, press in oval shape. Cut into two parts. Take left side edge, apply 2 drops of water to the
corner. Now take other edge and join them (as shown in the picture).
7. After joining them it will be in the shape of cone. Now stuff with the prepared curry, apply 2 drops of water to the corners 8. Take a kadai, add oil and allow to heat.
9. Now add these raw samosa to the oil, fry for 3 minutes in medium flame and take out. After 5 minutes again fry for few more
minutes until they change into nice golden in color.
10.Tasty samosa are ready. Serve hot.
