KOBBARI ANNAM (COCONUT RICE)

hi viewers, It's a wonderful dish.......usually while am preparing this recipe, I used to separate milk from coconut. But my dear sister-in-law "Sasi" told me easy method for this dish. It gave best & good result. Here is the recipe for you...............

Ingredients required

  • Coconut - 1
  • Basmati rice - 3 cups
  • Water - 4½ cups
  • Bay leaves - 1
  • Cloves - 2
  • Cinnamon stick - 2
  • Cumin seeds - 1 tsp
  • Black cardamom - 1
  • Mace - 1
  • Cashew nuts - 10
  • Onion - 1
  • Green chilly - 1
  • Ginger garlic paste - 1 tsp
  • Salt - 1 tsp
  • Oil - 3 tsp
  • Ghee - 2 tsp

      Method to prepare
      1. Soak basmati rice in water for half an hour.
      2. Cut coconut into pieces, make a fine paste by adding water and keep this coconut paste aside.
      3. Take a bowl, add water, coconut paste, boil for 5 minutes, strain it and keep coconut water aside.
      4. Now take a thick bottom pan,add oil and allow to heat.
      5. Add bay leaf, cloves, cinnamon stick, black cardamon, mace, cumin seeds, cashew nuts, fry for a minute in medium flame.
      6. Add finely sliced onions, sliced green chilly, fry for a minute in low flame. Add ginger garlic paste, fry for another minute
           in low flame.
      7. Then add prepared coconut water, salt, ghee and allow to boil.
      8. Add soaked basmati rice to the water, mix well, cook in low flame till rice is done.
      9. Delicious kobbari annam is ready. Serve it hot with mutton curry or alu meal maker curry.
