EGG FRIED RICE

Ingredients required
  • Rice - 250 gms
  • Egg - 4
  • Potato - 2
  • Carrot - 2
  • Beans - 100 gms
  • Finely sliced onion - 1
  • Sliced green chilly - 3
  • Ginger garlic paste -  ½ tsp
  • Pepper powder - ¾ tsp 
  • Cumin powder - ½ tsp
  • Salt - 1½ tsp
  • Bay leaves - 2
  • Cloves - 2
  • Cinnamon stick - 2
  • Sajeera - ¼ tsp
  • Oil - 5 tsp
  • Ghee - 1 tsp
  • Coriander leaves

       Method to prepare
      1. Cook rice and keep aside. While cooking add ½ tsp salt and ½ tsp oil to the rice.
      2. Chop carrot, beans and keep aside.
      3. Chop potato, deep fry them and keep aside.
      4. Take a pan, add ½ tsp oil, break eggs, add  ¼ tsp salt, fry and keep aside.
      5. Now take a kadai, add rest of the oil and allow to heat.
      6. Add sajeera, bay leaves, cloves, cinnamon stick, onion, green chilly and fry for 1 minute in medium flame.
      7. Add ginger garlic paste, chopped carrot, beans, ½ tsp salt,close the lid until vegetables are cooked three-fourth. 
      8. Add fried potato, fried egg, cumin powder, pepper powder, rest of salt, mix well.
      9. Finally add cooked rice, mix thoroughly and fry for 2 minutes without closing the lid.
    10. Add coriander leaves and switch off the flame.
    11. Colorful egg fried rice is ready.... serve it hot.
