- Brinjal - ½ kg . Roasted peanut powder - 3 tsp
- Grated coconut - 3 tsp . Cashew nuts - 8
- Cumin seeds - ½ tsp . Mustard seeds - ½ tsp
- Curry leaves - as required . Chopped onion - ½ cup
- Tomato puree - ½ cup . Chopped green chilly - ½ tsp
- Sugar - 1 tsp . Cumin powder - ½ tsp
- Coriander powder - ½ tsp . Ginger garlic paste - 1 tsp
- Turmeric - ¼ tsp . Salt - as required
- Red chilly powder - 1 tsp . Tamarind paste - 2 tsp
- Cloves - 3 . Cinnamon stick - 1
- Bay leaves - 1 . Oil - to fry
Method to prepare
1. Grind peanut powder, grated coconut, cashew nuts by adding little water to make a fine masala paste.
2. Take a kadai, pour oil and allow to heat.
3. Cut brinjal crossly and fry until they are cooked three-fourth and take out.
4. Take a pan, add 3 tsp oil and add cloves, cinnamon stick, bay leaves, mustard seeds, cumin seeds and fry for half minute.
5. Add onions, salt, curry leaves and turmeric, fry for one minute by adding tomato puree and ginger garlic paste.
6. Now add tamarind paste, cumin powder, coriander powder, red chilly powder and then add water,
allow to cook for 2 minutes.
7. Add prepared masala paste and cook for 5 minutes in medium flame.
8. Add sugar, fried brinjals, close the lid and cook for 5 minutes.
9. Finally, add coriander leaves and switch off the flame.
10. Spicy and delicious gutti vankaya kura is ready.
11. Serve it with veg. biryani or roti.
