VEGETABLE BIRYANI

Ingredients required
  • Basmati rice - 2 cups
  • Carrot - 2
  • Alu - 2
  • Beans - 100 gm
  • Green peas(Mutter) - ¼ kg
  • Paneer - 100 gm
  • Cloves - 4
  • Cinnamon stick - 2
  • Javitri(Mace) - 2
  • Sajeera - ¼ tsp
  • Ginger garlic paste - ½ tsp
  • Mint leaves - ¼ cup
  • Coriander leaves - ½ cup
  • Yogurt(Curd) - ¼ cup
  • Cumin powder - ¼ tsp
  • Coriander powder - ¼ tsp
  • Salt - 1½ tsp
  • Oil - 4 tsp
  • Food color(Saffron) - pinch
      Method to prepare
      1. Soak basmati rice for half an hour, cook the rice and keep aside. The consistency of the rice should be half cooked.
      2. Take a pan, pour oil and allow to heat.
      3. Add cloves, cinnamon stick, mace, sajeera and fry.
      4. Add vegetables, salt and cook for 2 to 3 minutes.
      5. Add ginger garlic paste, mint leaves, coriander leaves and fry for another 2 minutes.
      6. Add cumin powder, coriander powder, curd and cook until vegetables are cooked three-fourth and keep this veg. mix aside.
      7. Take thick bottom pan, place half of the veg.mix at the bottom, add curd and allow to heat.
      8. Add three-fourth of the rice and spread evenly.
      9. Then add rest of the veg.mix on the top, add the rest of the rice and sprinkle saffron color, close with tight lid.
     10. Cook for 6 to 7 minutes in low flame and switch off the flame.
     11. Color full and delicious vegetable biryani is in front of you, serve it hot & enjoy the dish.
