PERUGU VADA/DAHI VADA

Ingredients required
  • Urad dal - 250 gm
  • Rice - 2 tsp
  • Turmeric powder - ¼ tsp
  • Red chilly powder - ¼ tsp
  • Salt - 1 tsp
  • Chana dal - ½ tsp
  • Urad dal - ½ tsp
  • Cumin seeds - 1 tsp
  • Mustard seeds - ½ tsp
  • Green chilly - 3
  • Red chilly - 1
  • Curry leaves - as required
  • Asafoetida (hing) - ¼ tsp

  • Curd(yogurt) - 2 cups
  • Oil - to fry
        Method to prepare
        1. Soak urad dal, rice for 2 hours.(Adding little rice makes vada crispy & batter will not absorb too much oil)
        2. Grind them by adding  ½ tsp salt, green chilly into thick batter.Add  ½ tsp cumin seeds to the batter.
        3. Take a bowl, add curd,  ½ tsp salt, red chilly powder and mix with sufficient water and keep this curd aside.
        4. Take a pan, add 2 tsp oil, add chana dal, urad dal, cumin seeds, mustard seeds, red chilly, curry leaves, turmeric, hing and 
             fry for half minute.
        5. Add this tampering to the above curd and mix well.
        6. Take kadai, pour oil and allow to heat.
        7. Wet your left palm, take some batter , place on your palm, spread, keep hole at the center and put into the oil.
            Do the same procedure to the rest of the batter.
        8. Fry on both sides until they change into golden in color.
        9. Add these vadas to the tampering curd and soak for at least half an hour.
      10. Delicious perugu vadas are ready. If required, refrigerate and serve.

Tip :- for better results, before putting into tampering curd, dip the fried vadas in water for a second.
