SAMBAR

Tasty sambar with home made masala

Ingredients required

  • Turdal - 1 cup                               . Onion- 1 
  • Radish - 2                                     . Carrot - 1
  • Urad dal - 1 tsp                            Rice - ½ tsp
  • Methi seeds - ¼ tsp                     Cumin seeds - ½ tsp
  • Chopped ginger - 1 tsp               . Mashed garlic - 1 tsp 
  • Mustard seeds - ¼ tsp                . Pepper corns - ¼ tsp
  • Chana dal - 1 tsp                         . Tamarind paste - 1 tsp 
  • Chopped tomato - 1½ cup          .  Oil - 5 tsp            
  • Sliced green chilly - 2                   Cloves - 2
  • Turmeric powder - ¼ tsp              Salt -  as per taste
  • Red chilly powder - ¼ tsp              Cinnamon stick - 1
  • Dry coconut powder - 2 tsp            Curry leaves - as required
  • Coriander leaves - as required     . Asafoetida(Hing) - ¼ tsp
  • Coriander seeds -  ½ tsp               Red chilly - 2
  • Sugar - 1 tsp

      Method to prepare  masala
      1. Take a pan, add half of the cumin seeds, methi seeds, half of the mustard seeds, coriander seeds, chana dal, 
          urad dal, pepper, cloves, cinnamon sticks, red chilly and roast them in low flame for 6 to 7 minutes.
      2. Add coconut powder, half cup chopped tomato, ginger and fry for 3 minutes in low flame and let it cool.
      3. Grind this mixture in to a fine paste by adding sufficient water and keep this masala aside.
      Method to prepare sambar
      1. Cook toor dal and keep aside.
      2. Half cook the sliced radish, carrot and keep aside.
      3. Take a thick bottom pan, add oil and allow to heat.
      4. Add mustard seeds, cumin seeds, garlic, curry leaves, hing, chopped onion, sliced green chilly, turmeric powder and 
          fry for 2 minutes in medium flame.
      5. Add tomato and cook for 2 to 3 minutes by adding sufficient salt.
      6. Add prepared masala paste, tamarind paste and cook for 5 minutes by adding little water.
      7. Now add half cooked radish & carrot, cooked toor dal, red chilly powder, sugar and boil for 10 minutes in low flame by 
          adding sufficient water.
      8. When you smell the aroma of sambar, add coriander leaves and switch off the flame.
      9. Tasty sambar is ready, serve with rice or vada or idly.
