MASALA EGG CURRY

Ingredients required
  • Eggs - 4 
  • Onion - 2
  • Green chilly - 1
  • Garlic (Pealed) - 10
  • Ginger garlic paste - ½ tsp
  • Salt - ¾ tsp
  • Turmeric powder - ¼ tsp
  • Red chilly powder - ½ tsp
  • Coriander leaves - as required
  • Curry leaves - as required
  • Oil - 3 tsp
     

      Masala ingredients
  • Coriander seeds - ¼ tsp
  • Cumin seeds - ¼ tsp
  • Cloves - 2
  • Cinnamon stick - 1
  • Pepper corns - 6
      Method to prepare
      1. Boil the eggs, remove the shells. Keep Yolks and white separately. Now, cut white into small pieces and keep aside.
      2. Dry roast all masala ingredients for 2 minutes in low flame, make into fine masala powder and keep aside.
      3. Take a pan, add oil and allow to heat. 
      4. Add chopped onion, green chilly, garlic pieces, curry leaves and fry for 3 to 4 minutes in low flame.
      5. Add ginger garlic paste, turmeric powder, fry for 3 minutes in low flame.
      6. Then, add salt, red chilly powder, masala powder, fry for 2 to 3 minutes in low flame.
      7. Add egg white pieces, mix well. Add half a cup of water, close the lid and cook for 3 minutes in low flame.
      8. Add egg yolks, coriander leaves, mix well, cook for 2 minutes in low flame and switch off the flame.
      9. Spicy and tasty masala egg curry is ready. Serve it with rice or roti.
