- Brinjal - ½ kg
- Onion - 2
- Green chilly - 6
- Chopped Ginger - 2 tsp
- Coriander leaves - 1 cup
- Coriander seeds - 1 tsp
- Chana Dal - 2 tsp
- Urad Dal - 2 tsp
- Red Chilly - 4
- Curry leaves - as required
- Jeera - 1 tsp......
- Salt - 1 ½ tsp
- Turmeric powder - ¼ tsp
- Hing (Asafoetida) - ¼ tsp
- Oil - required to fry
Method to prepare
1. Take a pan, add 2 tsp oil and allow to heat.
2. Add chana dal, urad dal, coriander seeds, red chilly, jeera, hing, curry leaves and fry for 2 minutes in low flame.
3. Add chopped onions, green chilly, chopped ginger, turmeric powder, salt and again fry for 3 minutes in low flame and switch
off the stove.
4. Grind the above fried ingredients into a fine masala paste by adding coriander leaves.
5. Take brinjals cut crossly and keep aside.
6. In a pan, heat oil and fry brinjals for 20 to 30 seconds and take them out.
7. Take brinjals one by one and stuff them with masala paste.
8. Add 2 tsp oil to Kadai, place all the stuffed brinjals, close the lid and cook for 15 minutes in low flame.
9. While cooking, for every 5 minutes open the lid and turn the brinjals for better results.
10. Add coriander leaves and switch off the stove.
11. Spicy Gutti Vankaya Fry is ready, serve with rice and it's really rock.
