STUFFED KAKARAKAI/BITTER GUARD/KARELA

"Those who like bitter guard, they like this recipe very much and who don't they like very very much"

Ingredients required
  • Bitter guard - ½ kg
  • Fried chana(putna) - 100 gms
  • Grated dry coconut - 4 tsp
  • Red chilly powder - 2 tsp
  • Salt - 1 tsp
  • Garlic - 10 pieces
  • Jeera - 1 tsp
  • Kadi patta(Curry leaves) - as required
  • Coriander leaves - as required
  • Tamarind - 1 tsp
  • Curd - ½ cup
  • Water - ¼ cup
  • Oil - To fry

      Method to prepare
      1. Grind fried chana, grated coconut, jeera, garlic, red chilly powder, salt and keep this masala powder aside.
      2. Split bitter guard crossly and keep aside.
      3. Take a pan and add curd,water,tamarind, allow to boil and add splitted bitter guards.
      4. Cook for 5 minutes and take out.
      5. Take a pan allow oil to heat.
      6. Fry bitter guards in low flame until they turn into brown in color.
      7. Take out from oil, stuff with masala powder when they are in little hot itself and press gently.
      8. Now, take a pan put one tea spoon oil, add curry leaves, jeera and stuffed bitter guard.
      9. Sprinkle little water and close the lid and cook for 3 minutes and switch off the stove.
      10. Garnish the stuffed bitter guard with coriander leaves and serve.
